Lemon Citrus Cake with Butter Frosting





A simple rejenuating treat for summers, It has peculiar and very soothing touch of citrus and the moist and soft texture of this cake is just celestial. I tried it yesterday for a my dad's birthday and i can't express how much he loved it!

Ingredients:

-1 1/2 cups good quality self raising flour
-3 eggs
-Castor sugar 1 cup
-1/2 cup vegetable oil
-1 cup water
-Lemon zest 1 tsp
-Milk 1/2 cup
-Lemon juice 1 tsp
-Honey 1 tsp
-Soda bicarb 1/4 tsp
-Salt a pinch

Method:

Grease a 13X9 inch pan.
Beat sugar and eggs well until light and fluffly and the sugar dissolves completely. Gradually add oil while keep beating. Add zest and lemon juice with honey and salt. Keep beating for a while.

Sift flour and soda bicarb together. Fold egg mixture gradually into the dry ingredients and then add water and milk. Fold lightly together. Pour the mixture into the prepared pan and bake on 180 degrees C for about 30 minutes or the skewere comes out clean.

For Butter Frosting:

-Icing sugar 1 cup
-Butter 50 gms
-Hot water 1 tbsp

Beat all together to get a nice spreadable consistency. Spread on cooled cake. Sprinlke with decorations if you like.
